One of the main functions of the Consejo is to spread the culture associated with Sherry wines. To delve into the peculiarities and characteristics of Sherry wines, a training course is necessary to gain a solid understanding and mastery of the subject.

Our classroom courses offer professionals and enthusiasts a variety of learning resources focusing on different aspects of the subject such as the history, the production and the tasting of Sherry.

Sherry Academy Italia periodically organises courses and seminars of varying lengths and subject matter. In some cases, the courses are designed specifically for professionals such as lecturers, sommeliers or restaurant and bar staff, while in other cases the sessions are open to all wine enthisiasts and amateurs. In all cases, the course provides certifications indorsed by the Consejo Regulador de vinos de Jerez y Manzanilla.

Certified Sherry Expert

The Sherry Expert training course takes place in Florence every year.

The course is aimed at educators, sommeliers and teachers and it is designed to expand their knowledge and expertise in the world of Sherries.

Wine School Italia is the only education provider – accredited by the Consejo Regulador de Jerez – to issue the Certified Sherry Expert qualification through Sherry Academy Italia.

The Certified Sherry Expert course lasts three consecutive days. At the end of the course, the students who pass the exam will receive a Certificate of Attendance.

Course outline

The Certified Sherry Expert course takes place in Florence and combines theory and tasting sessions. The course has a limited number of places and includes an orientation and selection interview arranged by Sherry Academy Italia to assess if the candidate’s objectives meet those of the course. Day 1

On day 1 the course content will be described in detail – listing all the topics covered. Students will be also given their learning materials. The first session of the course is dedicated to the 3000 years of history and tradition of the Sherry Designation of Origin which have contributed to making the Jerez Sherry triangle famous throughout the world.

The session ends with a tasting and an introduction to the main styles of Sherry wines.

Day 2

The second session explores the viticulture and wine-making techniques characterising and influencing the different styles of Sherry wines. It also illustrates the natural and human factors that contribute to creating such stylistic diversity unique in the world.

The course includes a detailed study on the key role of flor, analysing its composition, development and influence on the wine. The tasting will focus on dry styles of Sherry defined as Vinos Generosos. In the second part of the day we will take a closer look at the different types of sweet Sherry wines: Vinos Generosos de Licor and Vinos Dulces Naturales. The lesson ends with a tasting of these wines.

Day 3

The third – and last – day is dedicated to the study of DO regulations and Sherry maturation with a final tasting focusing on special categories such as V.O.S. and V.O.R.S. as well as Sherries with indication of age.

The course includes a final test consisting of a blind tasting of three wines, 50 multiple choice questions and 4 open-ended questions.
